Shrimp Ceviche

A light, refreshing alternative to salsa.

Ingredients

  • 3 vine ripe tomatoes or 5 Roma tomatoes, chopped
  • 1/4 red onion, chopped
  • 1/2 bunch cilantro, chopped
  • 1/2 cup lime juice
  • 1 cucumber, peeled and chopped
  • 8 oz. cooked salad shrimp
  • 1/2 T ground cumin
  • sea salt to taste

Preparation

  • Add shrimp to lime juice and marinate for 15 minutes.
  • Add the rest of the ingredients, cover, and refrigerate until ready to serve.
