A light, refreshing alternative to salsa.
- 3 vine ripe tomatoes or 5 Roma tomatoes, chopped
- 1/4 red onion, chopped
- 1/2 bunch cilantro, chopped
- 1/2 cup lime juice
- 1 cucumber, peeled and chopped
- 8 oz. cooked salad shrimp
- 1/2 T ground cumin
- sea salt to taste
- Add shrimp to lime juice and marinate for 15 minutes.
- Add the rest of the ingredients, cover, and refrigerate until ready to serve.
