Turkish Coffee

3/4 c. Water
2 T. finely ground coffee with cardamom
1 T. Sugar

Turkish coffee is ground very fine, similar to an espresso grind, and traditionally has cardamom added to it.  You can buy it at any Mediterranean/Arab market.

Place cold water in the Turkish coffee pot over medium heat.  Add the sugar and allow it to dissolve as the water warms.  Add the coffee to the pot.  The coffee will float for a while until it becomes saturated and sinks.  Give the pot a stir.

Bring the coffee to a simmer and as the creme begins to form, remove from heat and stir.  Place back over the heat and repeat two more times.  This should develop a nice head of creme/foam on the top of the coffee.  Be careful not to allow the coffee to boil as this will destroy the creme.

Remove from heat and let stand for 1-2 minutes to allow the grounds to settle to the bottom of the pot.  Serve in demitasse cups with a glass of cold water to cleanse the pallet and a bit of Turkish Delight.
