- Place tomatillos in water and bring to a boil. Reduce heat and simmer until tomatillos become soft (about 8-10 minutes).
- Remove tomatillos from water and let cool.
- Remove the core from each tomatillo and place in food processor with remaining ingredients.
- Process until smooth.

- 2 large garlic cloves minced
- 1/2 sweet onion
- 1/2 bunch cilantro
- 2t cumin
- 1T oregano
- 1T capers
- 2 Serrano chilis or more to taste
- 2t kosher salt
- Juice of 1 lime
