Brine for Poultry

A simple brine to make poultry more juicy and flavorful.


  • 1 Gallon cold water
  • 1/2 C pickling salt
  • 1/3 C sugar
  • 1 orange
  • 1 lime
  • Peppercorns to taste


  • Mix together first three ingredients in a large stainless steel stock pot.  
  • Quarter the fruit, squeeze the juice into the pot and place and add the rinds.  Add the peppercorns and chicken.  Cover and refrigerate for at least 2 hours or up to overnight.
  • Remove chicken from the brine and rinse.  Prepare the chicken in whatever way you wish.
