A simple brine to make poultry more juicy and flavorful.
Ingredients
- 1 Gallon cold water
 - 1/2 C pickling salt
 - 1/3 C sugar
 - 1 orange
 - 1 lime
 - Peppercorns to taste
 
Preparation
- Mix together first three ingredients in a large stainless steel stock pot.
 - Quarter the fruit, squeeze the juice into the pot and place and add the rinds.  Add the peppercorns and chicken.  Cover and refrigerate for at least 2 hours or up to overnight.
 - Remove chicken from the brine and rinse. Prepare the chicken in whatever way you wish.
