Pickled Daikon Radish

ingredients

  • 1 white daikon radish, julienned into long strips
  • 2 scallions, sliced
  • 1 1/2 T rice vinegar
  • 1 1/2 tablespoons white sugar
  • 2 teaspoons Korean chili flakes (gochugaru)
  • 1 small clove garlic, minced
  • 1 teaspoon sea salt

Preparation

  • Place all ingredients except radish and scallions into a bowl and mix well.
  • Add the radish and scallions and refrigerate for one hour before serving.
