Big Daddy’s Chipotle Slaw

Just whipped this up one day and it was such a hit it is now a regular request at our house. Goes great as a side dish or as a topper on shrimp tacos.


  • 1 pkg bagged cole slaw or if you are feeling ambitious, break out the food processor and shred your own.

  • 1 c mayo

  • 2 T rice vinegar

  • 2-3 chipotle peppers, seeded and diced

  • 2 limes, juice of

  • 1.5 t sugar or honey

  • 1 T sesame oil

  • 1.5 T adobo

  • 1/2 bunch chopped cilantro

  • salt and pepper to taste

  • 2 or 3 scallions sliced thin

  • Red radishes sliced


  • Mix together the ingredients for the dressing.
  • Add half of the slaw and then half of the cilantro. Mix together.
  • Add the rest of the slaw and cilantro, mix, top with radishes, and refrigerate until ready to serve.
