This hardy dish is very satisfying and simple to make. Best of all, it is totally keto. Serve with a fresh salad and dry red wine, and you have a complete meal.
1 lb. homemade or store bought Italian meatballs
1 lb. mozzarella cheese, shredded
Parmesan geese, grated
Salsa Puttanesca or marinara sauce, recipe below.
2 T olive oil
- Heat oil in skillet over med heat. When hot, add meatballs and brown on all sides then set aside.
- Preheat oven to 375. Using the drippings in the skillet, make the sauce of your choice, recipes below.
- Arrange meatballs in a baking dish and pour sauce over.
- Top with cheeses and bake for 15-20 mins until sauce is bubbling and cheese is beginning to brown. Remove from oven and let rest for 5 mins. Garnish with fresh oregano and basil, and serve.
