A quick and simple week night meal that is budget friendly and since it only uses one pan, is easy on cleanup.
Ingredients
4 slices bacon, preferably the maple kind
1 lb ground beef
1 onion, chopped
1 bell pepper, chopped
salt and pepper to taste
2 oregano, or to taste
1 28 oz can diced tomatoes
1-1/2 c water
3 c egg noodles
grated parmesan cheese
1 scallion, sliced
2 cloves garlic, minced
Directions
- Fry bacon until crisp and set aside
- Add ground beef, onion, and green pepper to the bacon drippings and saute until the beef is cooked through.
- Spoon off excess fat and add salt, pepper, garlic, and oregano. Saute for another minute then add tomatoes and water then cover and simmer for 10 minutes.
- Bring to a boil and add egg noodles a few at a time.
- Reduce heat, cover, and simmer for another 10 minutes. Chop the bacon.
- When the liquid has reduced top with parmesan cheese, bacon, and scallions and serve.
