Spanish Noodle Skillet

A quick and simple week night meal that is budget friendly and since it only uses one pan, is easy on cleanup.


  • 4 slices bacon, preferably the maple kind

  • 1 lb ground beef

  • 1 onion, chopped

  • 1 bell pepper, chopped

  • salt and pepper to taste

  • 2 oregano, or to taste

  • 1 28 oz can diced tomatoes

  • 1-1/2 c water

  • 3 c egg noodles

  • grated parmesan cheese

  • 1 scallion, sliced

  • 2 cloves garlic, minced


  • Fry bacon until crisp and set aside
  • Add ground beef, onion, and green pepper to the bacon drippings and saute until the beef is cooked through.
  • Spoon off excess fat and add salt, pepper, garlic, and oregano. Saute for another minute then add tomatoes and water then cover and simmer for 10 minutes.
  • Bring to a boil and add egg noodles a few at a time.
  • Reduce heat, cover, and simmer for another 10 minutes. Chop the bacon.
  • When the liquid has reduced top with parmesan cheese, bacon, and scallions and serve.
